Our story

Walking the streets of Casco Viejo beneath a harsh sun (and the occasionally frequently oppressive humidity) works up an appetite. After exploring the churches, museums and other historical 19th century Spanish architecture, you’ll want to sit down, take a break and unwind in air conditioned comfort with an ice cold beer or cocktail, and grab a bite to eat. Crave is here to satisfy that need. We work with the region’s top farmers, fishmongers and butchers, and are committed to using as much organic and sustainable ingredients as we can. Our Chefs are focused on providing our guests with the freshest ingredients. .

The food at Crave is far from fancy. We believe that great ingredients and a made-from-scratch philosophy can translate into delicious meals, even if the dishes themselves may sound simple. A burger, a fish taco and a humble bowl of Japanese ramen may sound like snack food, but when you grind your own beef, make every sauce from scratch and pickle your own vegetables, you know the kitchen is taking every element as seriously as if it were a Michelin-starred restaurant.

Not only do we treat our menu with great respect, we also care deeply about our cocktail program. Without a full bar, making cocktails to-order is difficult, which is why we took a page from some of our favorite U.S. bars, and began bottling our own cocktails by hand, from scratch, every week. These hand-crafted cocktails are unique in Panama, and contain not only the finest spirits (you’ll notice the absence of liquor advertisers on the menus and signs in our restaurant) but also freshly-squeezed juices, homemade bitters and freshly-made simple syrup for natural sweetness. Our cocktails are packaged in 16-ounce glass bottles, so guests can see what’s inside, and they actually improve over the course of the week, developing character and depth. Each bottle contains enough for four cocktails, but we also offer to sell guests a single drink if they wish. Regular flavors include a “Casco Mule,” (Seco, simple syrup & ginger beer), KC's Old Fashioned and a “Pineapple Express” (Abuelo rum, fresh pineapple and lychee liqueur).

On Sundays, we offer one of the only brunches in Casco Viejo, from 10 a.m. – 9 p.m., featuring our housemade smoked bacon, homemade waffles with rum syrup and a daily fresh fruit plate, with an assortment of fresh tropical juices.
